Do not go gentle into that good night

Do not go gentle into that good night,
Old age should burn and rave at close of day;
Rage, rage against the dying of the light.

Though wise men at their end know dark is right,
Because their words had forked no lightning they
Do not go gentle into that good night.

Good men, the last wave by, crying how bright
Their frail deeds might have danced in a green bay,
Rage, rage against the dying of the light.

Wild men who caught and sang the sun in flight,
And learn, too late, they grieved it on its way,
Do not go gentle into that good night.

Grave men, near death, who see with blinding sight
Blind eyes could blaze like meteors and be gay,
Rage, rage against the dying of the light.

And you, my father, there on the sad height,
Curse, bless, me now with your fierce tears, I pray.

Star Sandwich Loaf
For this loaf, I used high extraction Star white wheat from Grist & Toll and added 5% NC malted barley from Carolina Ground. The idea was to create a sandwich loaf using all stone-ground flour from mills that source their grains locally and mill to order so that we’re always using fresh flour with most of its nutrients retained. This sandwich loaf satisfies morning toast cravings as well as after-school sandwich snacks. For those of you who bake, my formula is 85% hydration, 20% levain, and 2% salt; I make these 700 gram loaves in 8-inch pans.

I created this recipe back when I didn’t know the wonders of real flour. Originally, it calls for half wheat and half white. This just won’t do. Now that I’ve been working with fresh flour from various mills, I was curious to try this recipe again with a more fitting grain. I subbed Anson Mills graham flour for the all purpose to see what would happen…then I tried a batch with Maris Widgeon grain that I milled here in my own kitchen.
